Preparation of Potatoes
Cooking Potatoes: Place the potatoes cut into pieces in a pan, cover them with water and cook them over low heat until they are soft. This will take approximately 20-25 minutes. Once cooked, drain them and set them aside.
Preparation of the dough
Preparation of the vegetables: Coarsely chop the onion, fresh parsley, peppers and garlic cloves. Put everything in a blender and blend until you obtain a smooth mixture.
Chopping the Chicken: Add the chopped chicken breasts to the blender and blend until you get a fine paste. Add the blended vegetables, ground black pepper, ground red pepper, dried cumin, dried mint, salt and olive oil. Mix everything well until you obtain a uniform mixture. Cover with cling film and refrigerate for 30 minutes.
Preparation of the filling
Mashing Potatoes: Place boiled potatoes in a bowl and mash until smooth. Add the grated cheddar cheese, salt, ground black pepper and dried mint. Mix well until all the ingredients are well blended.
Formation of Meatballs
Forming Potato Meatballs: Grease your hands with a drizzle of oil and form balls with the potato and cheese mixture. Set aside.
Forming Chicken Meatballs: Remove the chicken mixture from the refrigerator and form into balls. Mash each chicken ball and wrap a potato ball in the center, sealing the edges tightly to seal in the filling.
Preparation of the sauce
Preparation of the sauce: In a bowl, mix the tomato puree with the water until you obtain a smooth sauce. Pour the sauce over the meatballs in the baking dish.
Cooking
First Cooking: Preheat the oven to 220°C. Place the dish in the oven and cook for 40 minutes, or until the meatballs are crispy and golden.
Adding the Cheese: After 40 minutes, remove the dish from the oven and sprinkle the meatballs generously with the grated cheddar. Return to the oven and cook for another 15 minutes, until the cheese has melted and is golden.
Service
Serve the potato and cheese meatballs wrapped in a mixture of vegetables in tomato sauce with love, great taste and enthusiasm. Accompany them with a side dish of your choice, such as a fresh salad or grilled vegetables, to complete the meal in a balanced and nutritious way.
