Preparation
1. **Prepare the Herb Butter:**
– In a small bowl, combine the softened butter, minced garlic, parsley, thyme, lemon zest, salt, and black pepper. Mix well until all ingredients are evenly distributed.
– Place the butter mixture on a piece of plastic wrap and roll it into a log shape. Twist the ends to seal it tightly.
– Refrigerate the herb butter log for at least 30 minutes to allow it to firm up.
2. **Prepare the Steaks:**
– Remove the steaks from the refrigerator and let them come to room temperature for about 30 minutes before cooking.
– Preheat your grill to high heat.
– Brush both sides of the steaks with olive oil and season generously with salt and black pepper.
3. **Grill the Steaks:**
– Place the steaks on the preheated grill and cook for about 4-5 minutes per side for medium-rare, or to your desired level of doneness.
– Use a meat thermometer to check the internal temperature (130°F for medium-rare, 140°F for medium, and 160°F for well-done).
4. **Finish with Herb Butter:**
– Once the steaks are done, remove them from the grill and let them rest for 5 minutes.
– Slice the herb butter log into rounds and place a round on each steak while they rest. The butter will melt and create a flavorful sauce.
5. **Serve:**
– Serve the steaks hot with your favorite sides.
