Step 1: Prepare the Gelatin
- In a small bowl, combine the gelatin with 1/2 cup cold water. Stir gently and let it sit for about 5 minutes to bloom. The gelatin will absorb the water and turn into a thick, jelly-like texture.
Step 2: Cook the Sugar Syrup
- In a medium saucepan, combine the granulated sugar, corn syrup, and 1/2 cup of water. Place the saucepan over medium heat and stir until the sugar has dissolved.
- Attach a candy thermometer to the side of the saucepan and continue cooking the mixture without stirring. Allow the syrup to come to a boil and cook until it reaches 240°F (115°C), known as the soft-ball stage. This step usually takes about 7-10 minutes, so keep an eye on the temperature.
