- Smoker or grill with a smoking feature
- Wood chips (hickory or oak recommended)
- Meat thermometer
- Aluminum foil
- Mixing bowls

Instructions:
- Preparation:
- Rinse oxtail pieces and pat dry.
- In a bowl, combine smoked paprika, garlic powder, onion powder, brown sugar, cayenne, black pepper, and kosher salt.
- Rub olive oil onto oxtails, then coat with the spice mix.
- Smoking Setup:
- Preheat your smoker to 250°F.
- Add soaked wood chips for a rich smoke flavor.
