Crab Stuffed Cheddar Bay Biscuits with Lemon Butter (Page 2 ) | March 16, 2025
1. Prepare the Crab Filling:
- In a bowl, combine the lump crab meat, cream cheese, mayonnaise, Dijon mustard, Old Bay seasoning (if using), lemon juice, and fresh parsley. Gently mix until combined. Season with salt and pepper to taste. Set aside.
2. Make the Cheddar Bay Biscuits:
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together the flour, baking powder, garlic powder, onion powder, salt, and pepper.
- Add the shredded cheddar cheese to the dry ingredients and stir to combine.
- Cut in the cold cubed butter using a pastry cutter, fork, or your hands until the mixture resembles coarse crumbs with pea-sized pieces of butter.
- In a separate bowl, whisk together the milk and sour cream. Add this wet mixture to the dry ingredients and stir until just combined. Be careful not to overmix—this will keep your biscuits light and fluffy.
3. Stuff the Biscuits:
- Scoop out about 2 tablespoons of biscuit dough and flatten it slightly in the palm of your hand.
- Place a spoonful of the crab filling in the center of the dough and fold the edges over to seal it, forming a ball. Place the stuffed ball of dough on the prepared baking sheet.
- Repeat this process with the remaining dough and crab filling. You should be able to make around 10-12 stuffed biscuits, depending on the size of your biscuits.
