Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
5. Assemble the Cookies:
Once the cookies are completely cool, spread about 1 teaspoon of strawberry jam onto the solid cookies (the ones without the cut-out window).
Gently place the cookies with the window over the jam-covered ones, pressing lightly to sandwich them together.
6. Dust with Powdered Sugar:
Once the cookies are assembled, dust the top of the cookies with a light sprinkle of powdered sugar for a beautiful finish.
