๐Ÿ›’ Ingredients:
๐Ÿช 200 g butter cookies
๐Ÿงˆ 100 g butter, melted
๐Ÿ‹ 3 large lemons (zest and juice)
๐Ÿฅ› 500 g mascarpone cheese
๐Ÿฌ 100 g icing sugar
๐Ÿฅ› 200 ml whipping cream (30%)
๐Ÿฎ 2 teaspoons gelatine
๐Ÿ’ง 50 ml water (to dissolve gelatine)
๐ŸŒŸ Optional: icing sugar for sprinkling
๐Ÿ’ก How to prepare it?
1๏ธโƒฃ Preparation of the base:
Grind the cookies in a blender until finely powdered.
Add the melted butter and mix until smooth.
Line a baking tin (diameter approx. 24 cm) with baking paper, spread the cookie mixture over it and press it down well. Place in the fridge for 30 minutes.
2๏ธโƒฃ Lemon cream:
Grate the zest of the lemons and squeeze out the juice.
Mix the mascarpone in a bowl with the icing sugar until smooth.
Add the lemon juice and zest and mix well.
