Instructions:
1. Place the chicken fillets between cling film and gently pound them until thin.
2. Season the chicken with salt, black pepper, Italian herb mix, and paprika.
3. In a bowl, mix vegetable oil, vinegar, eggs, mustard, and minced garlic. Season with salt and black pepper. Beat with a mixer.
4. Preheat the oven to 180°C (350°F).
For the Chicken Roll-Ups:
1. Spread a generous amount of the sauce on each chicken fillet.
2. Sprinkle chopped parsley and minced garlic on top.
3. Place half of the cheese on each fillet.
4. Roll up the chicken fillets and secure with toothpicks.
For the Potatoes:
1. Toss the potato chunks with black pepper, salt, paprika, and vegetable oil.
2. Grease a baking sheet with vegetable oil and place the potato chunks on it.
To Assemble:
1. Place the chicken roll-ups on top of the potatoes.
2. Spread more sauce on the chicken roll-ups.
3. Bake for 40 minutes at 180°C (350°F).
4. Sprinkle with the remaining cheese and bake for an additional 5 minutes until golden brown.
