To get started, scrub the potatoes and dice them into bite-sized pieces. Keep the peel on for flavor and nutrition.
2nd Step
Put 1 tablespoon of olive oil in a big pan and heat it over medium-high heat. As soon as the oil is heated, add the steak cubes and sear them for two to three minutes on each side, or until they are browned and cooked to your liking. Take the steak away from the heat and put it on a plate.

Place the remaining olive oil (1 tbsp) in the same pan. Toss in the diced potatoes and minced garlic, swirling to coat the potatoes in oil and impart the garlic flavor. Add some salt, black pepper, dried thyme, and dried rosemary for flavor. For a golden brown and fully cooked potato, simmer for around 10 to 12 minutes, stirring regularly.
4th Step
Stir in the sliced red onion, yellow bell peppers, and red bell peppers to the cooked potatoes in the pan. To soften the veggies somewhat and bring out their natural color, continue to sauté them for another 5–7 minutes.

Put the steak back in the pan once you’ve browned it, and cook it for another 2 to 3 minutes so the flavors can combine.
