Ingredients
- 1.5 pounds Ground meat
- 1 pounds kielbasa sausage packet sliced
- 1 medium yellow onion diced
- 2 garlic cloves chopped
- 3 large golden potatoes peeled and diced
- 30 oz cans of pinto beans rinsed and drained
- fifteen oz can of whole kernel corn exhausted
- fifteen oz can of diced tomatoes drain d
- 14 oz can Rotel undrained
- 10 oz bag of frozen mixed vegetables green beans, carrots, peas and corn
- 2 cups meat broth
- 2 tablespoons brown sugar
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- 2 teaspoons freshly chopped parsley to decorate
Instructions
- In a large skillet over medium high heat, cook and crumble the ground beef until browned and cooked through. Add the onions and minced garlic and cook for another 2 minutes, remove from heat.
- Add meat and onion mixture to bottom of 6-quart or larger slow cooker, along with remaining ingredients.
- Cover with lid and cook on high for 3-4 hours or on low for 6-8 hours, until vegetables are tender and cooked through.
- Garnish with parsley and serve immediately. Enjoy!
