Instructions
Step 1: Preheat and Prepare
- Preheat your oven to 350°F (175°C).
- Grease and line two 9-inch round cake pans with parchment paper for easy removal.
Step 2: Mix Dry Ingredients
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
Step 3: Cream Butter and Sugar
- In a large mixing bowl, beat butter and sugar together using an electric mixer on medium speed until light and fluffy (about 2 minutes).
Step 4: Add Wet Ingredients
- Add eggs one at a time, beating well after each addition.
- Mix in the lemon zest, lemon juice, and vanilla extract.
Step 5: Combine Wet and Dry Ingredients
- Alternately add the flour mixture and buttermilk to the wet ingredients, starting and ending with the flour mixture. Mix until just combined (do not overmix).
Step 6: Bake
- Divide the batter evenly between the prepared cake pans.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Let cakes cool in the pans for 10 minutes, then transfer to a wire rack.
