- Prepare the Zucchini: Wash and dry the zucchini. Cut each zucchini in half lengthwise. Use a spoon to scoop out the seeds and create a hollow center in each half, forming a “boat.”
- Season the Zucchini: Lightly sprinkle salt and pepper inside the zucchini boats. This will help to bring out the natural flavors of the zucchini.
- Add the Pizza Sauce: Spread a generous amount of pizza sauce inside each zucchini boat, ensuring the entire hollowed-out area is covered.
- Layer the Toppings: Sprinkle a layer of shredded mozzarella cheese over the sauce. Add mini pepperoni slices, diced bell peppers, sliced black olives, and diced red onions on top. Sprinkle Italian seasoning evenly over the zucchini boats.
- Add More Cheese: Top the zucchini boats with grated Parmesan cheese and an additional sprinkle of mozzarella if desired.
