4. Add the potatoes, Cajun seasoning, and smoked paprika, stirring to combine.
5. Season with salt and pepper to taste.
6. Cover the pot and let the potatoes cook on low heat for about 30-40 minutes, or until they are tender and have absorbed the flavors.
7. Garnish with chopped parsley if desired. Serve hot and enjoy!
