Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes.
Season with salt, black pepper, chili powder, cumin, smoked paprika, and cayenne pepper. Stir well to combine.
Pour in the tomato sauce and beef broth. Bring the mixture to a simmer and let cook until thickened, about 10-15 minutes.
Warm the tortillas according to package instructions.
Spoon the beef mixture down the center of each tortilla, sprinkle with cheddar cheese, and roll up tightly.
Serve the burritos warm, topped with your choice of garnishes.
