1 tablespoon honey
8 ounces of brie cheese, sliced
2 tablespoons butter, softened
Directions
1. Begin by preparing the blackberry balsamic spread. In a small saucepan, combine the blackberries, balsamic vinegar, and honey. Cook over medium heat, gently smashing the blackberries with a spoon, until the mixture thickens slightly, about 5-7 minutes. Set aside and let it cool.
2. Spread the softened butter on one side of each slice of bread. On the unbuttered side, layer slices of brie evenly on four slices of bread.
3. Spoon the cooled blackberry balsamic mixture over the brie on each of the four slices.
4. Top with the remaining four slices of bread, buttered side facing out.
5. Heat a large skillet or griddle over medium heat. Place the sandwiches in the skillet, pressing down gently with a spatula.
6. Cook until the bread is golden brown and the brie is melted, about 3-4 minutes per side. Keep an eye on the heat to avoid burning the bread.
7. Remove from the skillet, let cool for a minute or two, slice in half, and serve immediately.
Variations & Tips
For picky eaters, you can substitute the brie with a more familiar cheese like mozzarella or mild cheddar. You can also swap the blackberries for other berries or even a berry jam if blackberries aren’t available. If you’d like a bit of protein, adding thin slices of cooked turkey or ham can make this an even heartier meal. Finally, consider adding fresh spinach or arugula for a pop of color and extra nutrients.
