Directions
1. Preheat your oven to 350°F (175°C).
2. In a medium bowl, combine the chocolate cookie crumbs and the 1/3 cup of melted butter. Press this mixture firmly into the bottom and up the sides of a 9-inch pie pan to form the crust.
3. In a separate large mixing bowl, whisk together the sugar, cocoa powder, and 1/2 cup of melted butter until well combined.
4. Add the eggs and vanilla extract to the mixture, whisking until smooth.
5. Stir in the flour just until incorporated, then fold in the chopped pecans.
6. Pour the filling into the prepared crust and bake for 20-25 minutes, or until the center is set.
7. Remove the pie from the oven and immediately sprinkle the mini marshmallows on top. Return the pie to the oven for about 2 minutes, just until the marshmallows are slightly puffed.
8. Drizzle the melted chocolate over the top of the pie and let it cool completely before serving.
Variations & Tips
For those who might not be keen on pecans, you can substitute with walnuts or even leave out the nuts altogether. If mini marshmallows aren’t a favorite in your household, consider topping the pie with a thick layer of whipped cream instead. You can also add a teaspoon of instant coffee granules to the chocolate mixture to enhance the chocolate flavor for an extra-rich experience. For a fun variation, try using a graham cracker crust or layering the pie with a chocolate ganache top.
