Directions
1. Sterilize a medium-sized mason jar by boiling it in water for 10 minutes.
2. In a small bowl, combine the olive oil, garlic slices, chopped rosemary, thyme, dried oregano, red pepper flakes, and lemon zest. Mix well.
3. Place the cubed feta and mozzarella cheese into the sterilized mason jar.
4. Pour the olive oil mixture over the cheese cubes, ensuring all the cheese is covered. Gently tap the jar on the counter to remove any air bubbles.
5. Season with salt and pepper to taste.
6. Seal the jar tightly and refrigerate for at least 24 hours to allow the flavors to meld together.
7. Serve chilled or bring to room temperature before serving.

You can use various cheeses such as cheddar, gouda, or pepper jack for different flavor profiles. Consider adding other herbs like basil or dill, or perhaps infuse the olive oil with different spices such as cumin or coriander for a unique twist.
