Fresh and Flavorful: A Refreshing Cucumber, Onion, and Tomato Salad Recipe (Page 2 ) | May 7, 2024
INSTRUCTIONS:
- Prep the Ingredients: Wash the cucumbers, tomatoes, and parsley thoroughly. Peel the cucumbers if desired, and thinly slice them. Peel and thinly slice the red onion. Dice the tomatoes into bite-sized pieces. Chop the parsley for garnish if using.
- Combine Vegetables: In a large mixing bowl, combine the sliced cucumbers, sliced red onion, and diced tomatoes. Toss gently to mix the vegetables evenly.
- Prepare the Dressing: In a small bowl, whisk together the extra-virgin olive oil, red wine vinegar, honey (or sugar), salt, and freshly ground black pepper until well combined.
- Dress the Salad: Pour the dressing over the cucumber, onion, and tomato mixture. Toss gently to coat the vegetables evenly with the dressing.
- Chill and Serve: Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld together. Before serving, garnish with chopped parsley if desired. Serve chilled as a refreshing side dish or a light and healthy snack.
