Simple Tunisian Fricassee Recipe to Make (Page 2 ) | October 17, 2023
Preparation:
- Preparation of the dough:
- In a small bowl, prepare the sourdough by mixing the yeast cube, 200 g of flour and a little lukewarm water. Add a pinch of salt.
- Cover the bowl and let the sourdough sit for about 15 minutes. Then add the eggs and mix lightly.
- Add the oil and the rest of the lukewarm water. The device will be liquid. Gradually add the rest of the flour while mixing, until you obtain a soft dough that is no longer sticky. The dough should remain soft.
- Cover the dough and let it rise for about 1 hour. Then degas it by gently pressing on it.
- Shaping and cooking fricassees:
- Scoop out a ball of dough the size of a golf ball. Form sausages with the dough and place them on a baking sheet covered with parchment paper. Cover them and let them rise for 15 minutes.
- Fry the fricassees on both sides in hot oil for about 5 to 10 minutes, until cooked through and golden brown. Place them on absorbent paper to remove excess oil.
