To begin, preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease and flour a square baking pan measuring 9×9 inches, or line it with parchment paper to make removal from the pan easier.

Mix the all-purpose flour, baking powder, baking soda, salt, powdered cinnamon, and ground nutmeg (if using) together in a basin that is about medium in size using a whisk. Put this dry mixture to the side for now.

To make a light and fluffy mixture, combine the butter that has been softened and the granulated sugar in a large mixing bowl and cream together until the mixture is light and fluffy, it will take roughly two to three minutes to complete. A single egg at a time should be beaten into the mixture, and then the pure vanilla essence should be added. Keep on stirring until all of the ingredients are evenly distributed throughout the mixture.
4th Step
While stirring constantly, gradually add the unsweetened applesauce to the wet mixture, and continue to whisk until everything is well incorporated. While stirring constantly, gradually add the dry ingredient combination to the wet ingredient mixture. Stir until everything is just blended. If you want a soft cake, be cautious not to overmix the batter.
