Instructions:
1. Preheat your oven to 400°F (200°C).
2. Wash and peel the vegetables as needed. Cut them into similar-sized pieces so they cook evenly. You can dice them into small cubes or cut them into wedges or slices, depending on your preference.
3. Place the vegetables in a large mixing bowl. Drizzle some olive oil over them and season with salt, pepper, and your choice of herbs and spices. Toss the vegetables gently to coat them evenly with the oil and seasoning.
4. Spread the vegetables in a single layer on a baking sheet or roasting pan. It’s important not to overcrowd the pan, as this can prevent proper browning and crispiness.
5. Place the baking sheet or roasting pan in the preheated oven and roast the vegetables for about 25-35 minutes, or until they are golden brown and tender. Stir or flip the vegetables once or twice during cooking to ensure even browning.
