INSTRUCTIONS:
1. Set the oven’s temperature to 350°F (175°C). A 9×13-inch (23×33 cm) baking pan should be greased and placed aside.
2. Combine the cherries, sugar, cornstarch, water, and lemon juice in a medium saucepan. Cook the mixture, stirring often, over medium heat for approximately 5-7 minutes, or until the liquid thickens and the cherries soften and shine.
3. Turn off the heat and, if preferred, mix in the almond essence. As you make the crust and topping, let the cherry filling cool.
4. In a large mixing basin, combine the sugar, vanilla extract, and softened butter and beat until frothy.
5. Mix in the salt and flour gradually until the dough comes together. Although it will be crumbly, when squeezed, it ought to stay together.
6. Evenly press approximately two-thirds of the crust mixture onto the bottom of the baking pan that has been oiled. The bottom crust is made of this. Over the crust, evenly distribute the prepared cherry filling.
7. Evenly distribute the last third of the crust mixture over the cherry filling. It’s okay for some of the filling to show through.
