Can I use chicken breast or thighs instead?
You can, but you won’t get the same deliciousness as using the whole chicken. But if you’re in a pinch and that’s all you have, I suggest layering pickle slices over the top of the chicken breast.

How to Make Instant Pot Chicken with Dill Pickles
Ingredients you will need:
5-6 pounds of chicken
16 oz jar dill pickles and juice
½ t poultry seasoning
Salt and pepper
½ cup chicken broth
1 tablespoon butter, melted
Pat chicken dry with paper towels. Season all of the chicken with poultry seasoning, salt and pepper.
Chop the gherkins into gherkins and place in the cavity of the chicken.
Use kitchen twine to tie the chicken. NOTE:The chicken will literally fall off the tender bone and the wings and legs will break off when you try to remove it from the pot. Tying it up will keep it all together!
Pour the pickle juice and chicken broth into the Instant Pot.
Place the chicken on the metal trivet and carefully lower it into the Instant Pot.
Pressure cook on high for 36 minutes, or 6 minutes per pound of chicken. Allow the pressure to release naturally for 15 minutes and quickly release any remaining pressure. Carefully lift the chicken out of the Instant Pot and place on a baking sheet or baking dish.
Brush the chicken lightly with the melted butter and place under the broiler for about 5 minutes, or until the skin is golden brown and crisp. Look carefully!
