Sometimes, family members may fall ill, work and studies may call us away, or relatives may live too far away to visit. Or maybe, you simply need a quiet and peaceful Thanksgiving dinner at home, just you and your partner.
Now, if you find yourself in this situation, you may be wondering what to do about the traditional Thanksgiving dinner. It’s not like you can roast a whole turkey for just the two of you, right?
Well, fret not. There are plenty of ways to make Thanksgiving dinner special even if it’s just for two. For instance, you could opt for a smaller bird like a chicken or a duck. You could also make a roast beef or even a ham. Alternatively, you could choose to forego meat altogether and have a vegetarian feast with all your favorite sides.
Remember, the key to a successful Thanksgiving dinner is not just about the food, but also about the company. So, make sure to set the mood with some soft music, dim lighting, and maybe even some candles. Timing is the hard part of this skillet meal.. Fortunately, turkey breast, Brussels sprouts, and sweet potatoes cook in about the same amount of time. The size of the turkey breast and/or sweet potatoes may affect cooking time. If you are using large sweet potatoesfor example, you can put them in the oven while you prepare the filling and other parts of the meal.
The filling doesn’t really have to be baked in the oven., but the molds and the toasted top make the meal more fun. If you choose not to bake the filling, toast the nuts ahead of time to give the filling flavor and crunch. You can also cover the filling pans with aluminum foil for most of the cooking time, then toast them at the end. Some people like to cook the stuffing right on the baking sheet along with the turkey, but you’ll need to start everything else and then spread the stuffing on the baking sheet during the last 15 to 20 minutes of cooking.

Store everything in separate airtight containers in the fridge for 3-4 days or freeze up to 1 month.
Thanksgiving Dinner at Bread for Two
Preheat oven to 400°F. Prick sweet potatoes all over with a fork and rub with olive oil, salt and pepper. Place on the baking sheet.
Prepare the filling: In a medium skillet, cook the celery and onion in four tablespoons of butter over medium heat until the vegetables soften and the onions are translucent.
Add the water and the breadcrumb packet (and seasonings) to the pan. Stir well until the bread has absorbed all the water.
Add the cranberries and walnuts and stir to combine. Set aside.
Season the turkey breast as desired – Many turkey breasts will come pre-seasoned, but you can also add herbs like thyme, rosemary, and/or sage. Rub turkey breast with olive oil or softened butter and seasonings. Place in the center of the baking tray.
Spoon the filling into buttered ramekins and place on the baking sheet.
Toss the Brussels sprouts with olive oil, salt, and pepper. Spread out in the remaining space on a baking sheet.
Bake on the baking sheet for 45 minutes – 1 hour until the turkey breast registers 165°F in the center. Stir the Brussels sprouts once or twice during cooking. Remove the filled ramekins from the oven once they are golden brown on top and cooked through (time will depend on the size of the ramekins).
Once the turkey is cooked and the sweet potatoes are easily pierced with a fork, remove the pan from the oven.
Slice sweet potatoes and fill with butter and marshmallows. Place a tablespoon of butter over the top of the filling in each pan and place everything back in the oven. Bake for an additional 5 minutes to toast the marshmallows and the top of the filling.
Sprinkle a tray with pomegranate seeds and chopped fresh herbs and serve.
